Chicken, Corn And Tomato Chowder

1 Chicken (3 pounds), cut up

1 md Onion, chopped

1 ts Poultry seasoning

1 cn Corn kernels (16 ounces),

-with liquid 1 cn Whole tomatoes (16 ounces),

-drained and cut up 1 ts Lemon juice

Salt and freshly ground -pepper NOTE: This recipe is even better with FRESH corn and tomatoes. In a large saucepan, simmer the chicken in 4 cups with onion and poultry seasoning for 45 minutes. Remove chicken and let cool; reserve the broth. Skim fat from chicken broth. Remove meat from chicken; discard skin and bones. Cut meat into bite-size pieces. In a large non-aluminum saucepan, combine chicken, chicken broth, corn, tomatoes and lemon juice. Simmer for 30 minutes. Season with salt and pepper to taste. Serves 8. Chocolate Waffles-Mix

2 c Bake it all mix

2 Eggs

1 c Buttermilk or sour milk*

1/2 ts Vanilla extract

1 tb Shortening -- melted

1/2 ts Baking soda

1/4 c Sugar

1/4 c Cocoa

*To make sour milk, place 1 Tablespoon vinegar in measuring cup and fill to the 1 cup mark with milk. Beat eggs with a rotary or electric beater until frothy. Add milk, vanilla and shortening. Stir to combine. Add Mix, soda, sugar and cocoa. Beat with beater utnil lumps are small but batter is not smooth.

Beef Teriyaki

Ingredients and Instructions

1 1/2 pounds sirlion steak

1/2 cup soy sauce

1/2 cup dry white wine

1 clove garlic -- minced

1 teaspoon ginger

1 tablespoon cornstarch

3 packets Equal

Slice beef into 1/2 inch strips. Arrange in shallow casserole. Combine soy sa uce, wine, garlic, and ginger. Pour over meat, cover and refrigerate. Marinat e 2 hours. Broil beef 1-1/2 minutes on each side. Pour marinade into saucepan . Add cornstarch and cook over medium heat, until sauce thickens. Remove from heat, stir in Equal. Serve sauce over meat.
